Apple-marzipan Cake with Corn Flakes & Almonds

The perfect apple-marzipan cake with corn flakes & almonds recipe with a picture and simple step-by-step instructions.

Batter:

  • 1 Freshly squeezed lemon juice
  • 100 g Marzipan raw mass
  • 125 g Butter
  • 100 g Sugar
  • 1 packet Vanilla sugar
  • 3 Eggs size M
  • 250 g Spelled flour type 630
  • 1 packet Baking powder
  • 4 tbsp Milk

Covering:

  • 60 g Butter
  • 80 g Sugar
  • 150 ml Cream
  • 100 g Marzipan raw mass
  • 60 g Cornflakes without sugar
  • 40 g Flaked almonds
  • 40 g Oil
  • Parchment paper
  1. Peel and quarter apples, remove core and roughly dice. Place in lemon juice.

Pre heat the oven to 180 degrees celcius!

  1. Pluck 2,100 g of marzipan into a bowl, add butter and mix everything together well. Then gradually stir in sugar until a smooth dough is formed. Then stir in eggs one at a time. Approx. 30 seconds per egg.
  2. Mix flour with baking powder and alternate with milk, gradually stir into the marzipan egg mixture!
  3. Line a round baking sheet with parchment paper and grease! Pour in the dough, smooth it out and spread the apple cubes with lemon juice on top. Press down a little and bake in the preheated oven for about 45 minutes!
  4. In the meantime, heat the butter in a saucepan and melt the sugar and remaining marzipan. Then add the cream, corn flakes and flaked almonds and stir well!
  5. Take the cake out of the oven and spread the corn flake mixture on top. Put back in the oven and bake for another 15 minutes!
  6. Let the cake cool down a little and take it out of the baking pan, put it on a wire rack!
