  • 1 Eggplant fresh
  • 1 Zucchini fresh
  • 1 Yellow or orange peppers
  • 2 Fresh onions
  • 4 Garlic cloves
  • 2 packet Pizza tomatoes with basil
  • Pepper salt

  • Ground cumin
  • Extra virgin olive oil
  1. The first thing to do is to snip what it takes. Cut all the vegetables (except onions) into small cubes. The onions in half rings.
  2. Then we take a sufficiently large saucepan and fill it with a little olive oil, which is now well heated.
  3. Put the onions and peppers in there first. They are well fried. This is followed by the zucchini and aubergine, which are also well seared.
  4. Finally, the garlic and the pizza tomatoes follow. Then it is seasoned.
  5. Add the tomato cubes, put the lid on and simmer for about 10 minutes over low heat. If necessary, season again.
