Mixed Vegetables

- 1 Eggplant fresh
- 1 Zucchini fresh
- 1 Yellow or orange peppers
- 2 Fresh onions
- 4 Garlic cloves
- 2 packet Pizza tomatoes with basil
- Pepper salt
- Dried thyme
- Ground cumin
- Extra virgin olive oil
- The first thing to do is to snip what it takes. Cut all the vegetables (except onions) into small cubes. The onions in half rings.
- Then we take a sufficiently large saucepan and fill it with a little olive oil, which is now well heated.
- Put the onions and peppers in there first. They are well fried. This is followed by the zucchini and aubergine, which are also well seared.
- Finally, the garlic and the pizza tomatoes follow. Then it is seasoned.
- Add the tomato cubes, put the lid on and simmer for about 10 minutes over low heat. If necessary, season again.
