Cauliflower As Leaf Salad
The perfect cauliflower as leaf salad recipe with a picture and simple step-by-step instructions.
Salad ingredients
- Just the leaves
- Pear fresh
- White onion
- Chocolate shavings (dark)

- Pear liqueur
- Egg yolk (raw)
- White balsamic vinegar
- Mustard (spicy)
- Espelette pepper
- Salt, pepper, nutmeg zest
- Nut oil
- Lime zest
- Cook the cauliflower leaves in salted water until they are firm to the bite. During this time they prepare the dressing. To do this, put the appropriate ingredients in a mixer and stir in a pulsating manner to form a kind of thin mayonnaise. The more oil you add, the thicker the dressing becomes. Place in the refrigerator until the dressing is used up.
- Strain the cooked cauliflower leaves into bite-sized pieces and leave to cool in a bowl. As soon as they have cooled down, sprinkle with lime zest and fold in the grated onion.
- Now prepare the pear. First, the peel is rubbed with the lime fruit. Then peel the pear and cut the pear skin into fine strips – add to the salad. Grate the chocolate bar and stir. Now cut the pear fruit into fine strips and add to the salad. Mix well again. Now pour the dressing over it and let the salad stand for at least 1 hour.
- Either you put it again well mixed in the bowl on the table or you prepare it in portions (see pictures).
tip
- I added caramelized walnuts and a few cauliflower florets on the second try, which was a great addition. Unfortunately I didn’t take any pictures of it. Unfortunately, the visual image must be sufficient here.
