Fried Squid Curry (Dhallo Badun)

The perfect fried squid curry (dhallo badun) recipe with a picture and simple step-by-step instructions.

  • 1 kg Squid tubes
  • 2 Pc. Onions
  • 4 Pc. Garlic cloves
  • 2 tsp Ginger
  • 1 tsp Turmeric
  • 1 tsp Chilli powder
  • 2 tbsp Curry powder (Indian)
  • 1 tsp Cinnamon
  • 1 stem Lemongrass
  • 5 tsp Separate Curry leaves
  • 3 tbsp Vinegar
  • 750 ml Coconut milk
  • Clarified butter or ghee
  • Salt
  1. Cut squid tubes into 1 cm wide rings. Finely chop the onions and garlic. Bring coconut milk with the spices to the boil, add onions and garlic and simmer for about 1 hour until the squid is soft and the sauce has thickened.
  2. Then take the squid rings out of the sauce and let them drain. Season the sauce with salt.
  3. Finally, fry the drained squid rings in clarified butter and put them back into the sauce. Basmati rice or naan breads go well with it.
