Potato – Pumpkin Mash with Pork Belly and Sour Beans.

Meat + beans

  • 0,5 Pc. Hokkaido pumpkin
  • Water cold
  • 1 Pc. Diced onion
  • 2 Pc. Fresh celery leaves
  • 2 Pc. Freshly cut lovage
  • 1 Pc. Butter
  • 1 shot Milk hot
  • 1 pinch Freshly grated nutmeg
  • Salt and pepper
  • 1 Pc. Butter
  • 2 tablespoon Breadcrumbs
  • 500 g Pork belly
  • 1 packet Sour beans
  • 1 branch Finely chopped savory
  • 1 Pc. Diced onion
  • Salted water
  1. Hokkaido from my garden, wash into cubes.
  2. Peel and dice the potatoes and wash them. Finely chop herbs (from the garden). Peel and cut the onions.
  3. Put the pork belly in cold water. It takes a good 1.5 hours. After 1 hour, add the beans, 1 onion + savory.
  4. Now after approx. 65 min. Put on the potatoes, 1 onion and pumpkin. Add herbs after 10 minutes. Cook for another 10 minutes, then drain. Add butter, nutmeg + milk, mash.
  5. Toast the breadcrumbs in hot butter, place on the mash.
  6. Set up the ring, pour in the mash, and crumble. Cut open the pork belly. Put on beans.
