Egg with Serrano Ham and Potatoes (Huevos Rotos)

  • 2 Medium sized potatoes
  • 3 Eggs
  • 100 gram Serrano ham
  • Extra virgin olive oil
  • Salt
  1. First, you peel the potatoes and cut them into thin slices about 2 mm thick. These are lightly fried in extra virgin olive oil. The slices must not be fried until crispy. You cut the Serrano ham into small slices and fry the eggs with olive oil, but the yolks must remain liquid.
  2. To serve, place the fried potatoes on a plate, then place the egg on top of the potatoes and add salt. As the last layer, place the Serrano ham slices on the egg. Finally, you cut, break and mix the ingredients with a fork and knife, causing the liquid egg yolk to mix with the ingredients.
