Country Woman-style Liver Ragout …
The perfect country woman-style liver ragout … recipe with a picture and simple step-by-step instructions.
- 400 g Turkey liver
- 1 tablespoon Oil
- 1 Apple
- 1 half Lemon – just the juice
- 1 same size Onion
- 75 g Streaky bacon
- 7 Sage leaves
- 2 tablespoon Water
- 100 ml Cream
- 100 ml Salt and pepper
- Preparation: Rinse the liver with cold water and pat dry again, then cut into cubes about 2 cm in size. Quarter, peel and core the apple, cut into small pieces and mix immediately with the lemon juice. Finely dice the bacon and onion as well. Chop the sage leaves very finely and put all the prepared ingredients ready.
- Preparation 2: heat the oil in the pan, add the liver and fry lightly. Sauté the onions with the bacon cubes while turning and finally add the lemon marinated apple pieces, sage, water and cream. Put a lid on the pan and cook the ragout for about 10 to 15 minutes over a mild heat. Only now season with salt and pepper (to taste).
