Strawberry – Lime – Cake

The perfect strawberry – lime – cake recipe with a picture and simple step-by-step instructions.

Cake base

  • 2 Eggs
  • 4 tablespoon Coffee cream
  • 4 tablespoon Sugar
  • 1 pinch Salt
  • Zest of an untreated lemon
  • Alternatively
  • 2 Teaspoon (level) Lemon peel flavor
  • 8 tablespoon Flour
  • 2 Tablespoon (level) Food starch
  • 2 Teaspoon (level) Baking powder

Strawberry Layer

  • 100 g Fresh strawberries
  • 1 tablespoon Sugar
  • 1 tablespoon Freshly squeezed lemon juice
  • 250 g Fresh strawberries
  • 2 tablespoon Sugar
  • 1 tablespoon Food starch
  • 7 leaf Gelatin white
  • 300 g Cream cheese
  • 250 g Greek yogurt
  • 50 g Sugar

Lime layer

  • 2 Limes untreated
  • 7 leaf Gelatin white
  • 300 g Cream cheese
  • 350 g Greek yogurt
  • 75 g Sugar

Decoration

  • 5 Fresh strawberries
  • Some cake icing
  • 6 Raffaelo
  • Lime untreated

Cake base

  1. Mix the eggs with the coffee cream, sugar, salt and lemon zest (aroma). Stir in the flour, cornstarch and baking powder. Grease a baking pan (approx. 26 cm diameter). Fill in the batter. Bake in the oven at 175 degrees for about 12 minutes. Remove from oven and allow to cool.

Strawberry Layer

  1. Wash, drain and clean the strawberries (100 g). Cut into small pieces and mix with sugar. Let the juice steep. Add lemon juice and puree the whole thing. Pass through a sieve.
  2. Wash, drain and clean the strawberries (250 g). Cut into small pieces and mix with sugar. Let the juice steep. Put the strawberries in a sieve, catching the juice. Warm up the juice. Mix the cornstarch with a little cold water until smooth, add and bring to the boil briefly while stirring. Remove from heat, let cool and stir in the strawberries.
  3. Soak gelatine in cold water. Mix cream cheese with yogurt and sugar until creamy. Stir in the strawberries. Squeeze out the gelatine well and dissolve it. Mix with 2 tablespoons of the mixture. Add to the rest of the mixture and stir well.
  4. Remove the cake base from the mold and place on a cake plate. Fasten a cake ring around the base.
  5. Spread a third of the mixture on the floor. Spread the strawberries on top. Leave a border about 1 cm wide. Spread the rest of the mixture on top and smooth it out. Chill for about an hour.

Lime layer

  1. Wash the limes with hot water and dry them. Rub the peel and squeeze out the juice.
  2. Soak gelatine in cold water. Mix cream cheese with yogurt and sugar until creamy. Stir in lime juice and half of the zest. Squeeze out the gelatine well and dissolve it. Mix with 2 tablespoons of the mixture. Add to the rest of the mixture and stir well.
  3. Spread the mixture over the strawberry layer and smooth it out. Chill for 2 hours (or overnight).
  4. Carefully remove the cake ring.

Decoration

  1. Wash, dry, clean and halve the strawberries. Place in the middle of the cake. Brush with a little cake glaze.
  2. Carefully cut the Raffaelo in half. Place half a Raffaelo on each piece of cake. Garnish the cake with the lime and the remaining lime zest.
  3. Put the cake in the refrigerator until you are ready to eat it.
