Carrot and Potato Soup …
The perfect carrot and potato soup … recipe with a picture and simple step-by-step instructions.
- 200 g Smoked meat
- 500 ml Water
- 500 g Potatoes
- 500 g Carrots
- 1 packet Soup vegetables
- 2 tablespoon Butter
- 1 Diced onion
- 1 bunch Parsley stalks
- 1 bunch Vegetable broth
- 200 ml Cream
- Chopped parsley
- Salt and pepper
- Preparation: Bring the smoked meat to the boil with 500 ml of water and a little pepper and cook gently for about 40 minutes, dice the meat and set aside in the stock. Clean the potatoes, carrots and the soup vegetables and cut everything into cubes.
- Preparation 2: leave out the butter in a sufficiently large saucepan and gently sauté the onion with the soup vegetables in it. Deglaze with smoked meat stock including the meat cubes, add the carrots, potatoes and the parsley stem bundle and pour in enough vegetable stock until all the ingredients are just about covered.
- Put the lid on the saucepan and cook the soup over a low heat for 25 to 30 minutes. Then remove the parsley stalks and lift a ladle full of the still lumpy soup out of the pot, puree the rest with the hand blender, adding the cream.
- If the soup has too much binding, some more broth can be added. Fold in the chopped parsley and the ladle with the chunky soup, season with salt and pepper and serve. If you want, you can also heat a “Wienerle” in it (at least that’s how my husband likes it).
