Poultry: Satay Skewers with Cucumber Salad

The perfect poultry: satay skewers with cucumber salad recipe with a picture and simple step-by-step instructions.

  • 4 piece Turkey schnitzel, very thin, approx. 150 g each
  • 2 tablespoon Unsweetened coconut milk
  • 4 piece Garlic cloves, finely chopped
  • 1 Knife point Lemongrass, ground
  • 1 Knife point Coriander powder
  • 1 tablespoon Soy sauce, dark
  • Salt and pepper
  • 2 tablespoon Sesame oil brown
  • 1 tablespoon Sesame oil brown
  • 1 piece Garlic clove, finely chopped
  • 200 ml Unsweetened coconut milk
  • 1 tablespoon Peanut cream, chrunchy
  • 1 tablespoon Agave syrup
  • 1 tablespoon Soy sauce dark
  • Salt and pepper
  • 1 piece Cucumber
  • 500 g Fresh asparagus
  • 1 teaspoon Butter
  • 0,5 teaspoon Sugar
  • 1 piece Onion red
  • 1 handful Arugula
  • 1 tablespoon Rapeseed oil
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Agave syrup
  • Salt and pepper

the skewers

  1. Peel and finely chop the garlic. Mix together with the coconut milk and the spices. Cut the meat into approx. 3 cm thick strips and coat them with the marinade.
  2. Let the meat steep in the refrigerator for at least two hours. Water the kebab skewers and place the strips of meat in a wave shape.
  3. Heat the sesame oil in a pan and fry the skewers on both sides. This takes about 3 – 4 minutes per side.

  1. Peel and finely chop the clove of garlic. Heat the sesame oil in a saucepan and fry the garlic in it. Pour in the coconut milk and simmer for about 10 minutes. Stir in the peanut butter and season the sauce with agave syrup, soy sauce and salt and pepper. Let cool down.

  1. Peel the asparagus, cut off the ends and boil the asparagus in water with a little butter, salt, pepper and sugar until soft. Let cool and cut into bite-sized pieces.
  2. Peel the cucumber and slice / slice it as thinly as possible. Peel the onion and cut into half rings from the side. Sort out the rocket and chop it into pieces approx. 1cm long. Now mix everything.
  3. Make a dressing from vinegar, agave syrup, oil, salt and pepper and pour it over the salad. Let it soak for about 5 – 10 minutes.

the finish

  1. To serve, garnish the fried skewers with a little dip and place on preheated plates with the salad.
