Sweet Omelette / Scrambled Eggs / Japan Omelette

  • 8 piece Free range eggs
  • 20 g Sugar
  • 4 g Salt
  • 1 tsp Sake
  • 1 tsp Mirin (sweet rice wine)
  • 150 ml Dashi
  1. First of all, I have to explain that the traditional Japanese omelette (Dashimaki Tamago) is folded in 2 times after the first layer of egg mixture. And this step is repeated by adding the egg mixture again … But it also works differently and is just as delicious … !!!
  2. Whisk the eggs with all the ingredients and heat a pan with a little olive oil. Then add the egg mixture and fry to your liking. Either stir-fry a scrambled egg, or let the egg set into an omelette … You can serve great rice with it.
