Sweet Omelette / Scrambled Eggs / Japan Omelette
The perfect sweet omelette / scrambled eggs / japan omelette recipe with a picture and simple step-by-step instructions.
- 8 piece Free range eggs
- 20 g Sugar
- 4 g Salt
- 1 tsp Sake
- 1 tsp Mirin (sweet rice wine)
- 150 ml Dashi
- First of all, I have to explain that the traditional Japanese omelette (Dashimaki Tamago) is folded in 2 times after the first layer of egg mixture. And this step is repeated by adding the egg mixture again … But it also works differently and is just as delicious … !!!
- Whisk the eggs with all the ingredients and heat a pan with a little olive oil. Then add the egg mixture and fry to your liking. Either stir-fry a scrambled egg, or let the egg set into an omelette … You can serve great rice with it.
