Bohemian Style Red Cabbage-blue Cabbage

The perfect bohemian style red cabbage-blue cabbage recipe with a picture and simple step-by-step instructions.

  • 1 approx. 5 kg Red cabbage
  • 2 Large onions approx. 300 g
  • 1 piece Ginger approx. 20 g
  • 2 tbsp Lard
  • 2 tbsp Sugar
  • 5 tbsp Red wine vinegar
  • 1 liter Water
  • 2 tsp Salt
  • 3 Apples approx. 300 g
  • 5 tbsp Wild cranberries
  • 2 tbsp Flour
  • 2 tbsp Red wine vinegar
  • 1 tbsp Sugar
  • 2 tsp Salt
  • Possibly refine with red wine
  1. Remove the outer leaves, quarter the red cabbage, remove the stalk and cut finely. Peel and dice the onions. Peel and finely dice the ginger. Heat the crackling lard (2 tbsp) in a large, tall saucepan, fry the diced onion and diced ginger vigorously. Add sugar (2 tbsp) and salt (2 tsp) and fry briefly, deglaze with red wine vinegar (5 tbsp) and add water (1 liter). Add the cut red cabbage and cook / simmer for 15 minutes with the lid closed. In the meantime, peel the apples, remove the core and dice. Add the apple cubes and simmer for another 30 minutes. Dust with flour (2 tbsp), stir in wild cranberries (5 tbsp) and season with red wine vinegar (2 tbsp), sugar (1 tbsp) and salt (2 tsp). Let everything simmer for another 15 minutes, stirring occasionally. Be careful that the red cabbage does not burn, otherwise you may add a little more water. The red cabbage is a delicious and tasty side dish for many dishes and can be frozen well in advance
