The perfect jul cookies recipe with a picture and simple step-by-step instructions.

  • 200 g Soft butter
  • 1 Egg
  • 1 Egg yolk
  • 125 g Sugar
  • 1 pinch Salt
  • 375 g Spelled flour type 630
  • 1 tsp Baking powder
  • 1 Protein
  • 50 g Sugar – possibly a little more
  • 200 g Red currant jelly
  1. Beat the butter, egg, egg yolk, sugar and salt until frothy. Mix the flour and baking powder and sieve in portions over the creamy egg and butter mixture and knead carefully.
  2. Halve the dough and roll the two portions into sticks that are approx. 35 cm long. Wrap them in foil and put them in the fridge for at least 1 hour.
  3. Preheat the oven to 180 ° (convection 160 °, gas level 3).
  4. Now cut the dough rolls that have set in the refrigerator into approx. 3 mm thick slices and place them on a baking sheet lined with baking paper.
  5. Whisk the egg white well, brush the cookies with it and then sprinkle with the sugar. Bake the tray in the oven on the middle shelf and bake the cookies for 8-10 minutes until they are golden yellow. Then let cool on a rack.
  6. In the meantime, stir the currant jelly until creamy, always coat one cookie on the underside with it and place a second, uncoated one against it.
