Banana, Coconut and Eggnog Cake for Thermomix

The perfect banana, coconut and eggnog cake for thermomix recipe with a picture and simple step-by-step instructions.

  • 200 g Margarine or softened butter
  • 4 Pc. Eggs
  • 150 g Sugar
  • 1 packet Vanilla sugar
  • 50 g Advocaat
  • 200 g Flour, preferably type 630 spelled
  • 100 g Food starch
  • 3 tsp Baking powder
  • 60 g Desiccated coconut
  • 1 tbsp Lemon juice
  • 4 piece Bananas
  • 2 tbsp Flour
  1. Mix the margarine, eggs, sugar and vanilla sugar in a mixing bowl for 1 minute on level 5 until frothy. Add eggnog, flour, cornstarch, baking powder, coconut flakes and lemon juice and stir for 30 seconds on speed 6.
  2. Cut the peeled bananas (if you use very large bananas, 3 pieces are enough) into slices, turn in flour and carefully fold into the dough with the spatula. If you don’t turn the bananas in flour, they will all sink to the bottom when you bake them.
  3. Fill the liquid dough into a greased and floured (or even better: sprinkle the mold with desiccated coconut) and bake in the preheated oven on the middle rack at 180 degrees top / bottom heat for about 60 minutes.
  4. Let the cake cool down in the mold for about 15 minutes, then carefully remove it from the mold and let it cool down. Cover with chocolate icing if you like and sprinkle with roasted coconut flakes or chips. Banana chips are also suitable as decoration 🙂
