Wild Garlic Muffins

- 50 g Wild garlic leaves
- 1 Onion
- 200 g Flour
- 2 tsp Baking powder
- 2 Eggs
- 60 g Soft butter
- 150 g Lowfat quark
- 1 tsp Salt
- 0,5 tsp Pepper from the grinder
- 150 g Grated Emmental
- Wash and finely chop the wild garlic. Peel the onion and chop it very finely. Preheat the oven to 180 ° C. Line the hollows of a 12 cup muffin tin with paper liners or grease them.
- Mix the flour, baking powder, salt and pepper in a bowl. In a second bowl, stir the eggs until frothy. Mix the quark, Emmental and softened butter into the frothy eggs. Then add the flour mixture and stir until the dry ingredients are moist. Fold in the wild garlic and onion cubes.
- Fill the dough into the molds and bake for about 30 minutes until they are golden brown. Take out and let cool down completely.
