Delicious Vegetable and Egg Pan
The perfect delicious vegetable and egg pan recipe with a picture and simple step-by-step instructions.
- 200 g Broccoli
- 1 tsp Salt
- 0,5 Red pepper
- 0,5 Yellow pepper
- 1 Onion
- 100 g Spring onions
- 2 Garlic cloves
- 2 Eggs
- 0,5 tsp Salt
- 0,5 tsp Pepper
- 0,5 tsp Chilli flakes
- 2 tbsp Oil
- 1 tsp Mild curry powder
- 1 Tomato for garnish
- Clean the broccoli, cut into small florets, cook / blanch in salted water for about 2 minutes, drain through a kitchen sieve and rinse with cold water. Clean, wash and dice the peppers. Peel and dice the onion. Clean the spring onions, wash them and cut into rings. Peel and finely dice the garlic cloves. Beat the eggs, whisk them roughly and season with salt (½ teaspoon), pepper (½ teaspoon) and chilli flakes (1/2 teaspoon). Heat oil (2 tablespoons) in a medium-sized pan, fry the vegetables (onion cubes, garlic cubes, paprika cubes and spring onion rings) vigorously / stir-fry and season with mild curry powder (1 teaspoon). Cover the prepared flame and let it cook for about 5 minutes. Garnish with 2 tomato halves and serve in the pan.
