Orange Tagliatelle
The perfect orange tagliatelle recipe with a picture and simple step-by-step instructions.
- 300 g Tagliatelle
- 2 Oranges
- 3 Chicken egg yolks fresh
- 10 g Butter
- 50 g Grated Parmesan
- 50 g Chives
- Salt
- Pepper
- Chop the chives and set aside.
- Peel oranges, trying not to take the white peel.
- Cut the peel of one orange into very thin strips, leaving the peel of the other oranges as they are.
- In a coated frying pan, heat the oil with the butter over low heat. As soon as the butter has melted, add the orange peel in strips and fry.
- Put the other bowl in a saucepan with warm water and bring to the boil.
- In the meantime, whisk the egg yolks (must be very fresh) with a little lukewarm water in a bowl and season with salt and pepper.
- Take out the orange peel boiling in the water and add the tagliatelle to the same water and cook until al dente.
- Switch off the stove and add the Parmesan to the tagliatelle. Serve immediately
