Fillet of Beef with Herbs

The perfect fillet of beef with herbs recipe with a picture and simple step-by-step instructions.

  • 1 kg Beef fillet
  • 2 tbsp Clarified butter
  • 10 tbsp Virgin olive oil
  • 3 Pc Garlic cloves pressed
  • 4 tbsp Freshly chopped thyme
  • 4 tbsp Chopped parsley
  • 1 Pc. Zucchini
  • 20 Pc Cherry tomatoes
  • 500 g Tagliatelle
  • Sea salt from the mill
  • Black pepper from the mill
  1. Salt the beef fillet with the sea salt from the mill. Then fry the fillet briefly and vigorously in the pan with the clarified butter.
  2. Heat the oven to 150 degrees. Put the fillet in a baking dish and spread over the fillet with half of the olive oil. Cook the fillet in the oven for about 40 minutes. Save the frying fat in the pan is still needed.
  3. In the meantime: cook the tagliatelle according to the packaging instructions. Put the herbs in a small bowl, add the other half of the olive oil, the pressed garlic and stir everything well. Wash the zucchin and cut into thin slices (with a peeler).
  4. Briefly slice the zucchini in boiling water and set aside. Cross the tomatoes on one side and lightly sear them in the remaining frying fat.
  5. After approx. 40 minutes, take the fillet out of the oven, spread the herb marinade and let it rest for 2-3 minutes. Only then cut it open.
  6. Put the cooked noodles on the plate and mix in 3-4 slices of zucchini. Spread the braised tomatoes on the plate.
  7. Then cut the meat and put it on the plate and serve
