Salsify Potato Soup with Wild Garlic Pesto and Sprouts

- 500 g Salsify fresh
- 500 g Floury potatoes
- 1 size Onion
- 1 Clove of garlic
- Juice of 1/2 orange
- 2 tsp Vinegar
- 1 Bowl Water
- 1 l Vegetable broth
- Wild garlic pesto (homemade)
- Sprouts (self-grown)
- Pour water into a bowl and add the vinegar. Peel salsify, cut into slices and immediately place in the vinegar water, otherwise they will turn brown.
- Peel and dice the potatoes. Peel and roughly chop the onion.
- Steam the onion in a little oil until translucent. Then add potatoes and drained salsify and sauté briefly.
- Pour the broth and squeeze the garlic. Let simmer for 30 minutes. Add orange juice and puree finely.
- Place on plates and stir in 1 teaspoon of pesto and garnish with sprouts.
