Salsify Potato Soup with Wild Garlic Pesto and Sprouts

The perfect salsify potato soup with wild garlic pesto and sprouts recipe with a picture and simple step-by-step instructions.

  • 500 g Salsify fresh
  • 500 g Floury potatoes
  • 1 size Onion
  • 1 Clove of garlic
  • Juice of 1/2 orange
  • 2 tsp Vinegar
  • 1 Bowl Water
  • 1 l Vegetable broth
  • Wild garlic pesto (homemade)
  • Sprouts (self-grown)
  1. Pour water into a bowl and add the vinegar. Peel salsify, cut into slices and immediately place in the vinegar water, otherwise they will turn brown.
  1. Peel and dice the potatoes. Peel and roughly chop the onion.
  1. Steam the onion in a little oil until translucent. Then add potatoes and drained salsify and sauté briefly.
  1. Pour the broth and squeeze the garlic. Let simmer for 30 minutes. Add orange juice and puree finely.
  1. Place on plates and stir in 1 teaspoon of pesto and garnish with sprouts.
