Wild Garlic Potato Soup

The perfect wild garlic potato soup recipe with a picture and simple step-by-step instructions.

  • 200 g Floury potatoes
  • 1 Onion
  • 0,5 tbsp Butter
  • 300 ml Vegetable broth
  • 200 g Whipped cream
  • 1 bunch Wild garlic Tk
  • Salt and pepper
  • 2 tsp Salad croutons
  1. Let the wild garlic thaw (wash fresh wild garlic, pat dry and remove the stalks). Roughly chop the leaves and set aside some for the garnish. Peel and roughly dice the onion. Peel and wash the potatoes and cut into large pieces.
  2. Heat the butter in a saucepan, simmer the onions and potatoes in it for 2 minutes. Pour in the vegetable stock and the cream and simmer everything over a medium heat for about 15-20 minutes. Add the wild garlic. Bring the soup to the boil once and then with the Coarsely puree the blender and season with salt and pepper. Arrange the wild garlic potato soup on plates and serve sprinkled with the remaining wild garlic leaves and salad croutons.
