Carrot Soup with Orange Yogurt and Sprouts

- 5 Carrots
- 500 ml Vegetable broth
- 1 cm Ginger
- 100 g Unsweetened soy yogurt
- Juice of 1/2 orange
- Cumin
- Sprouts (self-grown)
- Roughly dice the carrots. Finely chop the ginger. Cook both in 500 ml vegetable stock until the carrots are tender.
- Puree the soup and season with cumin. Pour in some more broth if necessary.
- Mix the yoghurt with the orange juice. Garnish the soup with yogurt and sprouts.
