Carrot Soup with Orange Yogurt and Sprouts

The perfect carrot soup with orange yogurt and sprouts recipe with a picture and simple step-by-step instructions.

  • 5 Carrots
  • 500 ml Vegetable broth
  • 1 cm Ginger
  • 100 g Unsweetened soy yogurt
  • Juice of 1/2 orange
  • Cumin
  • Sprouts (self-grown)
  1. Roughly dice the carrots. Finely chop the ginger. Cook both in 500 ml vegetable stock until the carrots are tender.
  1. Puree the soup and season with cumin. Pour in some more broth if necessary.
  1. Mix the yoghurt with the orange juice. Garnish the soup with yogurt and sprouts.
