Pho ‘ga’ HaNoi

The perfect pho ‘ga’ hanoi recipe with a picture and simple step-by-step instructions.

  • 1 piece Chicken
  • 1 piece Onion white
  • 1 piece Red pointed peppers
  • 3 piece Garlic cloves chopped
  • 2 piece Carrot red
  • 0,125 piece Celery bulb
  • 0,25 piece Pak Choi mustard cabbage
  • 0,25 bunch Chopped parsley
  • 5 piece Tomatoes
  • 3 tbsp Asian fish sauce
  • 1 pinch Dried ginger
  • 1 piece Star anise
  • 3 cube Instant chicken broth (as a substitute for glutamate)
  • 1 pinch Sugar white
  • 1 shot Soy sauce sweet
  • Salt
  • Pepper
  • Edible oil tasteless
  1. The composition of this noodle soup is always different depending on the chef, except for the rice noodles, the use of star anise and of course the chicken!
  2. Prepare the chicken (alternatively chicken legs or breasts) together with the leftover vegetable cleaning and the star anise to make a chicken broth.
  3. Sauté the vegetables cut into strips in the oil, beginning with the hardest, and then add the sauces and ginger, fill up with the poultry stock and bring to the boil.
  4. Now add the pre-cooked and chopped chicken, the 3 cloves of garlic, the parsley, the stock cubes and the noodles to the soup.
  5. Bring everything to the boil until the noodles are cooked through and serve hot.
