Vanilla – Coconut – Rice Pudding on Mango Mirror …

The perfect vanilla – coconut – rice pudding on mango mirror … recipe with a picture and simple step-by-step instructions.

  • 125 Milliliters Coconut milk
  • 75 Milliliters Water
  • 1 tablespoon Sugar
  • 0,5 Vanilla pod
  • 60 g Short grain rice
  • 0,5 Fresh mango
  • 1 tablespoon Powdered sugar
  • 1 Centiliters Bacardi
  • Desiccated coconut
  • Mint fresh
  1. Cut open the vanilla pod, scrape out the pulp. Bring coconut milk with water, sugar, vanilla pulp and pod to the boil. Take out the vanilla pod and rinse (put aside as decoration), add rice to the milk and let it simmer gently for approx. 20 minutes. Stirring occasionally.
  2. Peel the mango, cut into wedges from the core and dice. Puree together with powdered sugar and rum.
  3. Place the mango puree on a plate as a mirror. Arrange rice on top. Garnish with the vanilla pod, desiccated coconut (unfortunately I didn’t have it) and mint
