Spelled Steamed Noodles with Vanilla Sauce

Custard

  • 60 g Sugar
  • 1 tbsp Sugar

  • 0,25 liter Milk
  • 70 g Butter
  • 1 Egg
  • 0,25 liter Milk
  • 1 Vanilla stick
  • 20 g Food starch
  • 2 tbsp Sugar

  • Clarified butter
  • Salt
  1. Bring the milk for the sauce with the vanilla stick to the boil, then remove it from the stove and let it steep for at least 30 minutes.
  1. Heat the milk with 1 tablespoon of sugar lukewarm then stir in the yeast, and let stand for 15 minutes until a fungus has formed, the milk should no longer be on the stove.
  1. Let the butter melt.
  1. Now put the flour, sugar, salt in the bowl and make a well, add the yeast milk, egg to the well and knead with the dough hook, gradually add the butter, add flour if necessary, and cover let rise to double the amount.
  1. In the meantime, take the vanilla stick out of the milk, slit the stick and scrape out the vanilla, bring the milk to the boil again, mix the cornstarch and sugar in 3 tablespoons of milk and add to the boiling milk. Bring to the boil and remove from the stove.
  1. Now knead the yeast dough well and cut it into 8 parts to make steamed noodles out of it.
  1. Heat a pan with clarified butter and add salt to the fat, insert steamed noodles and add about 200 ml of water, put the lid on and don’t open it again until they start to crackle, after about 15 minutes.
  1. Serve the steamed noodles with the vanilla sauce
