for the dressing
- 4 piece Tomatoes
- 4 tbsp Fresh basil
- 15 piece Black olives, seedless
- 1 piece Tomato finely chopped, without seeds
- 6 piece Black olives, seedless, finely chopped
- 6 tbsp Olive oil
- 1,5 tbsp White balsamic vinegar
- 1 piece Shallot, cut into small pieces
- Boil the potatoes in their skins (jacket potatoes), drain when the cooking time is over, rinse and peel them while they are still lukewarm. Slice. Wash the tomatoes, cut eighths and add to the potatoes. Also add the chopped olives and the finely chopped basil.
- For the dressing, put all the ingredients in a screw-top jar and mix carefully while shaking. Now fill the salad in a serving bowl, add a little salt and pepper and season to taste. Let it sit for a few minutes. Serve this salad with baked fish fillet or with meat skewers.
