Light Potato Soup

The perfect light potato soup recipe with a picture and simple step-by-step instructions.

  • 1 Kg Potatoes
  • 2 Carrots
  • 1 pole Leek
  • 2 tbsp Oil
  • 1 liter Vegetable broth
  • 350 ml Milk
  • 5 Hot dog
  • Salt and pepper
  1. Peel the potatoes and cut into small cubes, then wash. Peel and clean the remaining vegetables. Cut the carrots into slices and the leek into thin rings. Sauté the potatoes, carrots and leeks in the hot oil, then deglaze with the stock and simmer gently for about 30 minutes. Now add the milk and bring to the boil briefly, then remove from the heat and puree the whole thing. Cut the sausages into slices and add to the soup. Finally, season with salt and pepper, depending on your taste.
