Spiced Goose Legs

- 4 400 g goose legs
- 1 tbsp Orange zest
- 1 tsp Colorful pepper
- Salt
- 2 tbsp Sunflower oil
- Wash the legs of the goose, pat dry and scratch the skin side with a sharp knife several times in a cross shape. Rub the legs with the orange peel, pepper mixture and salt. Heat the oil in a roasting pan, fry the legs on the skin side for 3 – 4 minutes, turn them over and then fry them in the hot oven on the 2nd rack from the bottom for 45 – 50 minutes at 200 ° C (gas 3, convection not recommended). Baste regularly with the frying stock.
- Turn the oven back to 180 ° C (gas 2 – 3) and fry the legs for another 15 minutes, continuing to baste the frying fat.
