Spicy Duck Soup

The perfect spicy duck soup recipe with a picture and simple step-by-step instructions.

  • 400 g Duck leg
  • 1 El Peanut oil
  • 3 Pc. Red chili peppers
  • 3 Pc. Garlic cloves
  • 1 bunch Spring onions fresh
  • 50 g Dried morels
  • 500 ml Coconut milk thin
  • 0,5 bunch Thai basil
  1. Remove the skin and bones from the duck legs and cut the meat into small pieces. Heat the oil in a pan (or wok) and sear the meat in it. Take out and keep warm. Halve the chilli peppers, remove the seeds, wash the pods under cold running water and cut into strips. Peel the garlic cloves and chop them. Wash the spring onions and cut into strips. Simmer the garlic, chilli peppers and spring onions in the remaining roasting fat for 3-4 minutes . Pour in the coconut milk. Add the duck meat and morels and cook for about 6-7 minutes. Wash, dry and cut the basil into fine strips. Add and cook for about 2 minutes. Arrange and serve the soup.
