Coconut Soup with Prawns

  • 500 g Shrimp peeled deveined
  • 2 Pc. Garlic cloves
  • 1 Pc. Fresh ginger
  • 1 pole Leek
  • 300 g Carrots
  • 0,5 bunch Fresh coriander
  • 2 tbsp Rapeseed oil
  • 1 tbsp Red curry paste
  • 1 liter Chicken broth
  • 330 ml Coconut milk thin
  • 2 tbsp Lemon juice
  • Salt
  1. Rinse the prawns under cold water and pat dry. Peel off the garlic and peel the ginger, chop both finely. Cut into the leek from above, rinse under cold water, clean and cut into fine rings. Wash, clean and peel the carrots First cut long into strips and then roughly dice. Wash the coriander and pat dry. Pluck the leaves from the stems and chop finely. Heat the oil in a saucepan, add the prawns, ginger and garlic and fry for 1-2 minutes, then remove. Add the curry paste, carrots and leek and cook for 1-2 minutes while stirring. Pour in the broth and coconut milk, bring to the boil and 10min. Simmer . Season the soup with lemon juice, salt and coriander. Heat the prawns in it. Arrange the soup on plates and decorate with coriander.
