Six Grain Bread for Baking Machine

Ingredients
 

  • 150 g Six grain mixture from the health food store
  • 1 bag Dry yeast
  • 300 g Rye flour
  • 300 g Dark wheat flour
  • 1 tbsp Bread spice
  • 1 tbsp Sugar
  • 1 tbsp Salt
  • 1 packet Natural sourdough liquid in a bag
  • 500 ml Lukewarm water

Instructions
 

  • Grind the grain mixture with the hand mill on the coarsest setting, cover with water and place in the refrigerator for 2 hours, then drain through a fine sieve. Alternatively, leave the grains whole and place in the refrigerator overnight. They should be covered with water a thumb's width. Mix the types of flour, yeast and bread spices. First put the water and the grains in the bread machine mold. Then put the salt in one corner and the sugar in another. Put the sourdough in the middle. Finally, pour the flour mixture into the mold. Set the machine to the normal program and start. I have noticed that the bread does not turn out quite as well with the timer preselection. I also try to take out the dough hook at the end of the walking time. You can also moisten the bread slightly once during the walking time and once during the baking, then it is easier to cut later.
