- 300 g Pork tenderloin
- Salt
- 1 tbsp Red peppercorns
- 2 tbsp Sunflower oil
- 1 tbsp Dried cranberry
- 2 tbsp Mayonnaise
- 12 Discs Baguette
- Lemon balm fresh
- Wash the fillet, pat dry and cut into 12 medallions. Plate with the back of a knife. Crush the peppercorns in a mortar and sprinkle the fillet slices with them. Heat the oil and fry the medallions for about 2 minutes on each side. Degrease on kitchen paper and allow to cool.
- Chop the cranberries and mix with the mayonnaise. Season with salt. Brush the baguette slices with the mayonnaise, place a fillet slice on each and decorate with lemon balm.
