Soup: Red Onion Soup
The perfect soup: red onion soup recipe with a picture and simple step-by-step instructions.
- 750 g Red onions
- 2 toes Fresh garlic
- 100 ml Port red
- 0,5 bottle Dry red wine
- 1 El Sugar
- 400 ml Veal stock
- Salt and pepper
- Thyme
- 4 Discs Loaf
- Grated cheese
- Cut the onion into strips and the garlic into small cubes. Caramelize the sugar in a saucepan.
- Add the onions and garlic, sauté briefly and deglaze with the port wine and allow to reduce.
- Tilt the wine and let it boil once, then add the stock, salt and a little pepper.
- Let the onions cook until soft. Then take about 2 ladles out of the soup and puree with the magic wand.
- Put the mixture back into the saucepan and stir well, season with thyme to taste.
- Toast the bread, put the soup in an ovenproof dish, put a slice of bread in each cup and some cheese. Bake everything in the oven until the cheese has melted.
- If you want, you can bake the bread with the cheese in the oven so it stays crispy!
