Soup: Red Onion Soup

The perfect soup: red onion soup recipe with a picture and simple step-by-step instructions.

  • 750 g Red onions
  • 2 toes Fresh garlic
  • 100 ml Port red
  • 0,5 bottle Dry red wine
  • 1 El Sugar
  • 400 ml Veal stock
  • Salt and pepper
  • Thyme
  • 4 Discs Loaf
  • Grated cheese
  1. Cut the onion into strips and the garlic into small cubes. Caramelize the sugar in a saucepan.
  2. Add the onions and garlic, sauté briefly and deglaze with the port wine and allow to reduce.
  3. Tilt the wine and let it boil once, then add the stock, salt and a little pepper.
  4. Let the onions cook until soft. Then take about 2 ladles out of the soup and puree with the magic wand.
  5. Put the mixture back into the saucepan and stir well, season with thyme to taste.
  6. Toast the bread, put the soup in an ovenproof dish, put a slice of bread in each cup and some cheese. Bake everything in the oven until the cheese has melted.
  7. If you want, you can bake the bread with the cheese in the oven so it stays crispy!
