Cardamom Croissants

The perfect cardamom croissants recipe with a picture and simple step-by-step instructions.

  • 150 g Ground almonds
  • 150 g Sugar
  • 1 pinch Salt
  • 1 tsp Ground cardamom
  • 2 Egg yolks
  • 1 Vanilla pod, the pulp
  • 300 g Butter
  • Extra fine sugar
  • Ground cardamom
  1. Put the flour together with the almonds, sugar, salt and ground cardamom in a bowl, mix well and make a well in the middle. Put the two egg yolks and the vanilla pulp in there and flake the butter around the edge.
  2. Now knead everything into a firm dough with your hands and then wrap it in cling film and leave to rest in the refrigerator for at least 2 hours, but better overnight.
  3. The next day, line 3 baking trays with parchment paper. Put some extra fine sugar in a small flat bowl and mix the sugar with 1 – 2 knives of ground cardamom. Now cut off small knobs from the dough with a teaspoon.
  4. Form these cams into rolls of approx. 5 cm in length and then shape these rolls into small croissants. Then roll it with one side in the cardamom sugar and then place it on the baking sheet with the sugar side up.
  5. Bake in the oven preheated to 200 degrees on the middle rack for about 10 minutes.
