Warming Winter Stew
The perfect warming winter stew recipe with a picture and simple step-by-step instructions.
- 200 g Brussels sprouts fresh
- 5 piece Potatoes
- 4 piece Carrots
- 6 piece Figs dried
- 1 piece Onions
- 1 Cup Lentils red
- 100 g Fresh celery
- 2 tbsp Butter
- 1 tbsp Syrup
- 3 tbsp White wine
- 1,5 l Vegetable broth
- 3 piece Bay leaf
- 2 piece Allspice grains
- 1 tsp Pink berries
- 1 piece Ginger
- 2 tbsp Garam masala
- 1 tsp Ground cinnamon
- Salt
- Pepper
- 1 bunch Coriander
- 100 ml Cream
- 1 piece Lemon
- Clean and halve the Brussels sprouts. Peel the potatoes and cut into cubes. Peel the carrots and cut them into pieces about 0.5 cm thick. Dice the onion. Cut the figs into small pieces. Cut the celery into small cubes.
- Put the butter in the saucepan and sauté the onion until translucent. Then add the garam masala and sear it briefly. Now add the vegetables and figs and fry them briefly. Caramelize with the syrup, deglaze with the white wine and add the broth. Add the red lentils. Put in the bay leaves. Coarsely grind the pimento grains and the pink berries in a mortar and add to them. Add cinnamon, salt and pepper. Peel the ginger and chop it into very fine pieces and add to the saucepan. Close the lid of the pressure cooker and wait until the second red ring is visible on the crown. Now everything has to cook for about 8-10 minutes.
- Take the pot off the stove and rinse with cold water, slowly release the pressure and open the pot. Now the open pot can be put back on the stove. Finely chop the coriander and add to the stew with the cream. Squeeze the lemon. Taste again whether there is enough salt on it, done.
