- 1 handful Cooked spaghetti gluten-free
- 1 Red Paprika
- 1 small Zucchini
- 1 small Vegetables from the day before
- 3 piece Farm eggs
- 300 ml Rice milk
- 2 tsp My vegetable broth *
- 2 tsp Freshly ground pepper
- 2 tsp Grated Parmesan
- Put some olive oil in a pan, add the vegetables, then the spaghetti that I cut lengthways and crossways. Then I grated the peppers over it with a grater and poured the zucchni over it with the peeler.
- Beat the eggs in a bowl, add the milk, season with the vegetable stock and pepper and whisk well. Then distribute the mixture over the pan and top with the Parmesan to top it off.
- Now put the whole thing in the oven and at 170 degrees for about 20 minutes ….. oven was still warm from baking the cake 😉
- There was an iceberg lettuce with it
