Soup from May Turnip

The perfect soup from may turnip recipe with a picture and simple step-by-step instructions.

  • 1 May turnips approx. 230 g
  • Some onion
  • 1 tablespoon Oil
  • 200 Milliliters Vegetable broth
  • 2 tablespoon Coffee cream or whipped cream
  • 2 tablespoon Cream cheese
  • Pepper and salt
  1. Peel the turnips thinly and cut into cubes. Put the tender green leaves to one side. Peel onion and chop finely.
  2. Heat the oil. Sauté the onion and turnips while stirring. Add the vegetable stock and cream. Bring to the boil briefly and simmer gently on a low flame for about 10 minutes.
  3. Puree the soup. Stir in the cream cheese. Season with pepper and salt.
  4. Put the soup on a plate. Wash the leaves from the turnip, shake dry and cut into small pieces. Garnish the soup with it.
