Pork Medallions with Tomato Salsa

The perfect pork medallions with tomato salsa recipe with a picture and simple step-by-step instructions.

  • 600 g Pork tenderloin
  • 2 piece Spring onions fresh, cut
  • 2 tbsp Rapeseed oil
  • 1 pinch Hot paprika powder
  • 3 piece Garlic cloves chopped
  • 5 piece Fresh tomatoes
  • 1 tbsp Tomato ketchup
  • 1 pinch Salt
  • 1 pinch Pepper from the grinder
  • 0,5 bunch Chopped basil

preparation

  1. Cut the meat into medallions and place in a marinade dish. Mix the oil, paprika and chilli together. Cover the meat with the marinade. Let it steep for 1 hour.
  2. 2 Halve tomatoes and set aside. Roughly grate 1 tomato and finely dice the remaining tomatoes. Mix the rasp and cubes with the garlic and ketchup. Season with salt and pepper. Pluck the basil and cut into strips and mix with the salsa.

Steaks and the final spurt

  1. Remove the meat from the marinade and season with salt and pepper. Turn over on the grill, fry together with the halved tomatoes for 6 minutes. Arrange on plates and add the salsa in bowls. Roasted baguette with garlic butter tastes good with it.
  2. Or fry in butter for 3 minutes on each side. Finally add the spring onions and fry briefly.
