Ingredients
 

  • 2 Spring onions fresh
  • 2 Cloves of garlic fresh
  • 2 Chili peppers finely chopped
  • Thyme spice
  • A smAll piece of ginger
  • 4 tbsp Olive oil
  • 3 tbsp Soy sauce
  • 3 tsp Brown sugar
  • Salt
  • Black pepper from the mill
  • 2 Limes the juice
  • 800 g Pork tenderloin
  • 1 Fresh mango
  • 2 Fresh onion
  • 250 ml Vegetable broth

Instructions
 

  • Chop the spring onion, garlic, chilli, thyme and ginger. Finely grind half of the spring onion, garlic, half of the chilli, thyme and ginger with 3 tablespoons of oil, soy sauce, 1 teaspoon of brown sugar, salt, pepper and the juice of 1 lime to a paste. Rub the meat with it and chill.
  • Finely dice the mango and onions. Mix everything with 2 teaspoons of brown sugar, the rest of the spring onion, chilli and lime juice. Fry the meat (with paste) in 1 tablespoon of oil on all sides. Cook in the oven at 150 degrees for about 10 minutes.
  • Deglaze the meat with the broth and bring to the boil. Season with salt. Serve everything. I served rice with it.
