Pork Fillet with Mango Salsa

- 2 Spring onions fresh
- 2 Cloves of garlic fresh
- 2 Chili peppers finely chopped
- Thyme spice
- A smAll piece of ginger
- 4 tbsp Olive oil
- 3 tbsp Soy sauce
- 3 tsp Sugar brown
- Salt
- Black pepper from the mill
- 2 Limes the juice
- 800 g Pork tenderloin
- 1 Fresh mango
- 2 Fresh onion
- 250 ml Vegetable broth
- Chop the spring onion, garlic, chilli, thyme and ginger. Finely grind half of the spring onion, garlic, half of the chilli, thyme and ginger with 3 tablespoons of oil, soy sauce, 1 teaspoon of brown sugar, salt, pepper and the juice of 1 lime to a paste. Rub the meat with it and chill.
- Finely dice the mango and onions. Mix everything with 2 teaspoons of brown sugar, the rest of the spring onion, chilli and lime juice. Fry the meat (with paste) in 1 tablespoon of oil on all sides. Cook in the oven at 150 degrees for about 10 minutes.
- Deglaze the meat with the broth and bring to the boil. Season with salt. Serve everything. I served rice with it.
