Quinoa and Cherry Casserole
The perfect quinoa and cherry casserole recipe with a picture and simple step-by-step instructions.
Casserole:
- 150 g Quinoa or Inca rice
- 250 ml Milk
- 80 g Butter at room temperature
- 3 Eggs separated
- 100 g Powdered sugar
- 0,5 Lemon organic zest
- 370 g Morello cherries pitted drained weight
- 2 tbsp Vanilla sugar in-house production
- 1 pinch Salt
Aside from that:
- Butter for greasing the mold
Vanilla sauce:
- 500 ml Milk
- 50 g Raw cane sugar
- 1 Vanilla pod
- 4 Egg yolk
- 30 g Powdered sugar
Quinoa and cherry casserole:
- Rinse the quinoa in a sieve under hot water and then put it in a saucepan with the milk. Bring everything to the boil and let it swell for about 15 minutes over a low heat, stirring constantly. Just until the quinoa really sets. If it is still too hard, add some milk. Then let everything cool down.
- Beat the butter, powdered sugar and the 3 egg yolks with the lemon zest until frothy. Fold in the quinoa milk (the whole thing is now porridge). Drain the morello cherries well in a sieve (collect the juice and use otherwise). Beat the egg whites with the pinch of salt until stiff and also fold carefully into the mixture.
- Butter a baking dish and pour in the mixture evenly. Bake in a preheated oven at 170 ° top and bottom heat for approx. 50-60 minutes (chopsticks test). If the surface turns too brown, cover with aluminum foil.
Vanilla sauce:
- Scrape out the vanilla pod and add the pulp to the milk in a saucepan. Add the pod and raw cane sugar and heat. Meanwhile, use a whisk to whisk the four egg yolks with the powdered sugar in a bowl. If the milk is just before the boiling point, remove the pod and add half of the milk to the egg yolks, stirring immediately, and whip until smooth. Then add everything back to the rest of the milk and simmer carefully, stirring continuously, until the sauce thickens.
Serving:
- Place the hot vanilla sauce in a mirror on the plate and place a piece of the warm casserole on it. Sprinkle lightly with powdered sugar. Add the rest of the vanilla sauce. There are no limits to further creativity. The captured cherry juice can also be used there.
Annotation:
- The quantities given are sufficient as a dessert for 4 people. It can also be served as a pastry (sweet main course) for 2-3 people. The quinoa as a sweet variant was brilliant, and I found it much lighter and fluffier than a rice casserole.
