Turkish Almond Biscuits

- 2 Eggs
- 3,5 cups Flour
- 1 packet Baking powder
- 1 packet Vanilla sugar
- 1 Cup Sugar
- 250 g Butter
- 1 Cup Turkish yogurt
- 1 bag Ground almonds
- 5 tbsp Sunflower oil
- 0,5 Organic lemon
- 1 bag Peeled, whole almonds
- Separate an egg. Set the egg yolks aside and place the egg white with the second whole, beaten egg in a large mixing bowl. Mix the eggs with the sugar and yogurt until the sugar has dissolved.
- Add the sunflower oil, then add the vanilla sugar and baking powder and continue stirring. Add the softened butter in pieces.
- Rub the lemon peel with a fine grater and add to the batter. Then add the almonds and finally the flour in portions and stir carefully. Wrap the dough in foil and refrigerate for 60 minutes.
- Preheat the oven to 180 ° C. Divide the almond dough into two equal pieces. Cut off pieces of dough the size of a small walnut from one part, roll them into a ball between the palms of your hands and place them on a baking sheet lined with baking paper. Leave some space between the balls as they will rise a little while baking.
- When the tray is full, place an almond on each dough ball and press firmly.
- Mix the egg yolk with a little water and brush the almond balls with it.
- Put the balls on the baking sheet in the preheated oven and bake at 180 ° C for 25 to 30 minutes. Makes two sheets.
