Homemade Sparkling Wine Noodles
The perfect homemade sparkling wine noodles recipe with a picture and simple step-by-step instructions.
- 500 g Sifted flour
- 3 Free range eggs
- 4 tablespoon Sparkling wine / remaining stock from a party on Sunday)
- Or fOr nOrmal pasta:
- 4 tablespoon Water
- Salt
- Sift the flour and knead with the eggs, sparkling wine (or water and salt to form a smooth dough. The dough should be kneaded for at least 10 minutes so that it gets a nice, smooth surface.
- Shape the dough into a ball, close it in a container with a lid and let it rest for 30 minutes
- Knead again and cut into pieces of the same size. Use the pasta machine to cut into ribbon noodles or spaghetti and either let them dry briefly and cook as usual, or let them dry out completely for storage. Dust the rolled-out strips thinly with flour so that the individual noodles do not clump together.
- As you can see in the pictures, I have a so-called noodle tree. My husband built this for me because of my constant pasta production. Here I hang the noodles in the middle and when they are completely dry they are stored in a large container lined with parchment. This drying also prevents the individual noodles from sticking together and I can remove the noodles individually if necessary.
- For Lasgne plates I roll out longer strips, cut them to the desired size and place them on a tea towel to dry. In the pictures you can see spaghetti and ribbon noodles!
- For the preparation with dough making, resting time and rolling out you need about 90 minutes!
