Ingredients
For the pancakes
- 3 Free range eggs
- 375 ml Lactose-Free milk
- 180 g Sifted flour
- Salt
- Vegetable margarine
For the compote
- 3 Apple Elstar
- 1 Pear fresh
- Raisins
- 0,5 Lemon fresh
- 100 ml Mulled wine
- 1 Cinnamon stick
- 0,5 tsp Mulled wine spice
- 1 Vanilla sugar brown
Instructions
For the dough
- Separate the eggs. Put the milk, flour, -3- egg yolks and a pinch of salt in a mixing bowl. Beat the whole thing on high with the whisk until smooth.
- Beat the -3 egg whites until stiff and carefully fold them into the mixture. Bake the pancakes in a greased hot pan
For the compote
- Peel, core and chop the apples and pears. Drizzle with the juice of half a lemon. Heat the mulled wine in a saucepan and add the pieces of fruit and spices. Let simmer for about 20 minutes.
