Ingredients
 

For the pancakes

  • 3 Free range eggs
  • 375 ml Lactose-Free milk
  • 180 g Sifted flour
  • Salt
  • Vegetable margarine

For the compote

  • 3 Apple Elstar
  • 1 Pear fresh
  • Raisins
  • 0,5 Lemon fresh
  • 100 ml Mulled wine
  • 1 Cinnamon stick
  • 0,5 tsp Mulled wine spice
  • 1 Vanilla sugar brown

Instructions
 

For the dough

  • Separate the eggs. Put the milk, flour, -3- egg yolks and a pinch of salt in a mixing bowl. Beat the whole thing on high with the whisk until smooth.
  • Beat the -3 egg whites until stiff and carefully fold them into the mixture. Bake the pancakes in a greased hot pan

For the compote

  • Peel, core and chop the apples and pears. Drizzle with the juice of half a lemon. Heat the mulled wine in a saucepan and add the pieces of fruit and spices. Let simmer for about 20 minutes.
