Starter: Ragout Fin

  • 1 Chicken
  • 1 bunch Soup greens fresh
  • 5 Allspice grains
  • 1 Laurel
  • 1 Onion
  • 3 El Flour
  • 3 El Butter
  • Worcester sauce
  • Salt and pepper
  • 100 ml Milk
  • Grated cheese
  1. Cook the chicken with the vegetables, spices and salt until soft.
  2. Then cut into small pieces. Put the butter in a saucepan, let it melt, add the flour and sweat it well, but don’t let it turn brown. Deglaze with the milk, then gradually pour in the broth so that a good consistency is created.
  3. Season to taste with salt, pepper and Worcester sauce. Fill into small bowls, cover with cheese and bake in the oven until the cheese is light brown.
