Salad: Rice Noodle Salad and Fish Meatballs

  • 250 g Rice noodles
  • 2 Pepper yellow and red
  • 4 Gherkins
  • 1 Onion
  • 2 toes Garlic
  • Salt and pepper
  • 5 El Balsamic vinegar
  • 10 El Extra virgin olive oil
  • 6 Cocktail tomatoes
  • 1 pinch Sugar
  • 3 Rods Spring onion rod

Fish meatballs:

  • 1 small Sea bream
  • 3 pcs Cod fillet
  • Dill
  • Lemon peel
  • 1 Egg
  • Salt and pepper
  • 3 El Breadcrumbs
  • Breadcrumbs for breading
  • Clarified butter
  1. Cook the rice noodles in plenty of salted water. Chop the bell pepper, onion, leek, garlic and cucumber as well as the tomatoes into small pieces.
  2. Mix a little olive oil with balsamic vinegar and a pinch of sugar, add the vegetables and pasta, mix well and season to taste. Let it steep.
  3. Chop the fish in a blender, add the dill, the egg, salt, pepper and lemon peel and stir, mix in enough breadcrumbs to make a smooth mixture.
  4. Now shape meatballs out of them, turn them in breadcrumbs and fry them in clarified butter until golden brown.
