Rice Noodle Salad with Minced Meat and Green Papaya

Ingredients
 

  • 500 g Ground beef
  • 1 Papaya green
  • 4 Spring onions
  • 2 Red peppers
  • 2 tablespoon Red curry paste
  • 2,5 tablespoon Sweet soy sauce
  • 0,5 Fresh lime
  • 2 Garlic cloves
  • 200 Milliliters Water
  • 3 tablespoon Coriander leaves
  • Salt
  • 400 g Rice noodles

Instructions
 

  • Core the peppers and cut into strips. Cut the spring onion into rings. Put aside.
  • Cut the papaya in half, remove the core, peel and cut into cubes.
  • Sear the minced meat in a pan. Reduce the heat and add the papaya and fry for about 5 minutes. Add the curry paste and the chopped garlic and deglaze with 200 milliliters of water. Cover and simmer over a mild heat for 25 minutes. Then add the soy sauce and the juice of half a lime. Season to taste with salt.
  • In the meantime, prepare the rice noodles according to the instructions on the packet.
  • Add the minced meat mixture to the peppers and spring onions while still hot. Mix well and add the coriander leaves and let cool.
  • Place the rice noodles with the minced meat mixture in portions on plates.
  • Green papaya is available in Asian stores.
