Ingredients
- 500 g Ground beef
- 1 Papaya green
- 4 Spring onions
- 2 Red peppers
- 2 tablespoon Red curry paste
- 2,5 tablespoon Sweet soy sauce
- 0,5 Fresh lime
- 2 Garlic cloves
- 200 Milliliters Water
- 3 tablespoon Coriander leaves
- Salt
- 400 g Rice noodles
Instructions
- Core the peppers and cut into strips. Cut the spring onion into rings. Put aside.
- Cut the papaya in half, remove the core, peel and cut into cubes.
- Sear the minced meat in a pan. Reduce the heat and add the papaya and fry for about 5 minutes. Add the curry paste and the chopped garlic and deglaze with 200 milliliters of water. Cover and simmer over a mild heat for 25 minutes. Then add the soy sauce and the juice of half a lime. Season to taste with salt.
- In the meantime, prepare the rice noodles according to the instructions on the packet.
- Add the minced meat mixture to the peppers and spring onions while still hot. Mix well and add the coriander leaves and let cool.
- Place the rice noodles with the minced meat mixture in portions on plates.
- Green papaya is available in Asian stores.
