Rice Noodle Salad with Minced Meat and Green Papaya

The perfect rice noodle salad with minced meat and green papaya recipe with a picture and simple step-by-step instructions.

  • 500 g Ground beef
  • 1 Papaya green
  • 4 Spring onions
  • 2 Red peppers
  • 2 tablespoon Red curry paste
  • 2,5 tablespoon Sweet soy sauce
  • 0,5 Fresh lime
  • 2 Garlic cloves
  • 200 Milliliters Water
  • 3 tablespoon Coriander leaves
  • Salt
  • 400 g Rice noodles
  1. Core the peppers and cut into strips. Cut the spring onion into rings. Put aside.
  2. Cut the papaya in half, remove the core, peel and cut into cubes.
  3. Sear the minced meat in a pan. Reduce the heat and add the papaya and fry for about 5 minutes. Add the curry paste and the chopped garlic and deglaze with 200 milliliters of water. Cover and simmer over a mild heat for 25 minutes. Then add the soy sauce and the juice of half a lime. Season to taste with salt.
  4. In the meantime, prepare the rice noodles according to the instructions on the packet.
  5. Add the minced meat mixture to the peppers and spring onions while still hot. Mix well and add the coriander leaves and let cool.
  6. Place the rice noodles with the minced meat mixture in portions on plates.
  7. Green papaya is available in Asian stores.
