Brown Bread with Sourdough Made from Old Bread

The perfect brown bread with sourdough made from old bread recipe with a picture and simple step-by-step instructions.

  • 1 portion Sourdough made from old bread
  • 300 g Wheat flour 1050
  • 200 g Rye flour 1150
  • 15 g Salt
  • 1 Tl Fenugreek powder
  • 1 Tl Coloring malt or caro
  • 2 El Oil
  • 0,5 Pc Yeast fresh
  • 1 Tl Honey
  • 200 ml Lukewarm water

  2. Dissolve the yeast and honey in the water.
  3. Put all the ingredients, including the sourdough, in a bowl, add the yeast / honey mixture and knead into a smooth dough. Now cover the dough and let it rise for 60 minutes in a warm place.
  4. Knead the dough vigorously again, shape it into a loaf of bread and place on a baking tray. Let rise for another 60 minutes. In the meantime, preheat the oven to 200 °.
  5. Put the bread in the oven and spray it neatly into the oven with a water spray bottle (approx. 4-7 sprays). Bake for 10 minutes at 200 °. Then reduce the temperature to 175 ° and bake for another 40 minutes.
