Cook the pasta in salted water. Then pour it onto a square tray and drizzle with olive oil.
Wash the zucchini, cut off the ends and slice into fine strips. Wash the tomatoes and cut in half.
Clean the peppers and cut them into fine strips.
Put olive oil in a pan, fry the salmon, remove and cut into cubes.
Put the onion in the pan and fry, gradually adding the zucchini and noodles, add a little vegetable stock and finish cooking. The stock should now be reduced.
Fold in the salmon & let the tomatoes run with it. Some basil & season.
I cut the olives once and only add them to the plate because my husband doesn't like them.
