Is quince skin safe to eat? Cooked and uncooked?
The old quince varieties are not edible raw. The peel is very woody, hard and acidic, the down contains bitter substances. All of these are natural defense mechanisms of the quince against predators.
Newer breeds such as the “raw food” or the honey quince can be eaten raw, but peeling is still recommended. When processing jelly, compote or jam, the quinces can also be used unpeeled. The fluff should be wiped off beforehand because of the bitter substances and the quinces should be washed thoroughly. The core is removed because of the hydrocyanic acid content in the cores.
