When germinating turmeric, no substances are produced that would be harmful to health. Therefore, sprouted turmeric is safe to use.

Sprouting occurs when the rhizome is stored at room temperature for a long period of time. At the same time, it gradually dries up and becomes shriveled because the moisture is needed for the new shoot. Some of the ingredients are also consumed in the process.

The situation is different if the rhizome is kept in a humid place, for example in a plastic bag in the fridge. In this case, mold can quickly form and the rhizome should never be eaten.

Fresh turmeric is best kept in tightly closed containers in a cool, dark place or in the vegetable drawer of the refrigerator. Fresh rhizomes have a firm, smooth skin, are firm to the touch, make a cracking sound when they break through, and the cracked surface has a juicy sheen.
